It’s winter, it’s cold, and we need some healthy recipes to get us through this prolonged slump that feels everlasting. Sometimes it’s hard to get motivated in the winter months, and then we resort to comfort foods that may not be the healthiest, when in fact…there are some really delicious healthy breakfast recipes that we should be starting our day with instead.

No dairy or gluten needed! A large batch of breakfast bars are a great staple to make ahead and grab on the go. These fig ones look particularly delicious and fairly simple to make. If you’ve exhausted your egg intake (sometimes I feel like I need an egg break, if only for a day!) then chickpea based frittatas are a great alternative. Baking them in a muffin tin is another great way to have a large batch made for the week.

Lastly, nobody really needs a recipe for avocado toast since everything you need is essentially in the name, but sometimes a little reminder on the perfect soft boiled egg is a good thing to master.

Fig Breakfast Bars via Raising Generation Nourished

  • 9 dried figs, stems cut off, and quartered
  • 1 cup water
  • 1 ¼ cups unsweetened shredded coconut
  • ⅔ cup blanched almond flour
  • ⅓ cup tapioca flour
  • ¼ cup chia seeds
  • Up to ¼ cup grassfed collagen (optional)
  • 3 tbsp coconut sugar
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ⅓ cup coconut oil, melted (butter should work here too if you like to use that)
  • 1 tsp vanilla extract

Chickpea Flour Mini Frittatas via The Mostly Vegan

  • 3 cups assorted chopped veggies – broccoli, corn, bell pepper, zucchini, spinach, etcetera*
  • 1/2 cup green onion, thinly sliced
  • 2 tablespoons extra virgin olive oil, plus additional oil for brushing muffin tins
  • 2 cups chickpea (garbanzo bean) flour
  • 1/4 cup nutritional yeast
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Avocado Toast via Gather a Table

  • 2 slices of bread, toasted
  • 1 avocado
  • 1/4-1/2 teaspoon chili flakes
  • salt and pepper
  • chopped parsley, for garnish
