White Bean Artichoke Basil toast via Pinch of Yum
- 1 clove garlic
- 1 14-ounce can chickpeas or white beans, rinsed and drained
- a handful of fresh basil
- juice of one lemon (or two, if you love tangy like me!)
- a generous drizzle of good quality olive oil
- salt and pepper to taste
- 1 heaping cup canned or jarred artichoke hearts, drained
- about 2 cups fresh baby spinach or other greens
- 10 small pieces of whole wheat bread, toasted

Honey Lemon Breakfast Toast with Ricotta and Fig via Ambitious Kitchen
- 2 slices of whole grain or gluten free bread
- 1/4 cup low fat ricotta
- 1/2 fresh lemon, juiced
- 1/2 tablespoon honey
- 4 figs, sliced
- 2 tablespoons pistachio pieces
- 1 teaspoon lemon zest

Butternut Squash, Arugula, Goat Cheese and Garlic via Hello Glow
- one whole head of garlic
- 2 tablespoons extra virgin olive oil
- 1 lb butternut squash, peeled and chopped into 1/2 -inch dice (see instruction below)
- salt
- pepper
- 4 ounces soft goat cheese, room temperature
- 1.5 ounces fresh baby arugula
- 1 teaspoon balsamic vinegar
- 4 large thin slices of grainy, dense bread (or a good quality french boule), toasted
- Maldon or fleur del sel salt, for finishing

Avocado Toast with Pistachio Dukkah via Half Baked Harvest
Pistachio Dukkah
- 1/2 cup raw pistachios
- 1/4 cup black or white sesame seeds
- 2 tablespoons cumin seeds (or 2 teaspoons ground cumin)
- 1 tablespoon coriander seeds (or 1 teaspoon ground coriander)
- 2 teaspoons dried oregano
- salt + pepper, to taste
Avocado Toast
- 2 pieces crusty whole grain bread
- 2 tablespoons sun-dried tomatoes packed in oil (reserve 1-2 tablespoon of the oil)
- 2 tablespoons kalamata olives, roughly chopped
- 1 ripe avocado, pitted + sliced
- salt + pepper, to taste
- juice + zest from 1/2 lemon
- 1-2 poached or fried eggs
- feta cheese, crumbled
- large handful of micro greens + fresh herbs, for topping
