Eggs are a life staple and essential. Practically like water. They’re a great source of protein, therefore are an important starting point to all things breakfast and beyond. And…what would brunch be without a scramble, omelette, frittata, quiche, fried egg on avocado toast, and yeah–you get the point.

Anyways, the possibilities in the world of eggs are truly endless. Don’t think you need to settle for a plain scramble or a simple omelet. Instead, delve into the world of shakshuka, garlicky frittatas, quinoa pesto bowls and more. Happy Eating 🙂

Shakshuka via New York Times

  • 3 tablespoons extra-virgin olive oil
  • 1 large onion, halved and thinly sliced
  • 1 large red bell pepper, seeded and thinly sliced
  • 3 garlic cloves, thinly sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • ? teaspoon cayenne, or to taste
  • 1 (28-ounce) can whole plum tomatoes with juices, coarsely chopped
  • ¾ teaspoon salt, more as needed
  • ¼ teaspoon black pepper, more as needed
  • ¼ teaspoon black pepper, more as needed
  • 5 ounces feta cheese, crumbled (about 1 1/4 cups)
  • 6 large eggs
  • Chopped cilantro, for serving
  • Hot sauce, for serving

Garlicky Spinach and Parmesan Frittata via Williams Sonoma’s blog

  • 1 1/4 lb. (625 g.) spinach
  • 4 Tbs. (2 fl. oz./60 ml.) olive oil
  • 1 small yellow onion, thinly sliced
  • Salt and freshly ground black pepper
  • 6 eggs
  • 4 cloves garlic, finely chopped
  • 1/4 cup (1 oz./30 g.) grated hard cheese such as Parmesan

  • Juice of ½ lemon
  • 4 eggs
  • 2 tablespoons chopped walnuts

  • 1 teaspoon red pepper flakes (adjust to taste)

  • 4 sweet potatoes
  • 1 tablespoon sunflower oil
  • Butter, for frying
  • 2 teaspoons vinegar
  • 4 eggs
  • 3½ ounces feta cheese
  • Small handful of Italian parsley, chopped
  • 1 long red chile, seeded and finely chopped
  • Sea salt and freshly ground black pepper
