That Aren’t Boring

It’s so easy to get caught up in life and not take a moment to breathe, relax, and cook some delicious food for yourself (or some guests!) Going out is always fun, but sometimes staying in can be just as exciting. Here are a few healthy dinners that are not chicken and rice. Whether you’re having taco night (margaritas too, please!), or looking for a simple pasta crowdpleaser, these recipes should have you covered.

Avocado Zucchini Carbonara Pasta via Half Baked Harvest

  • 1 pound bucatini pasta
  • 2 ripe, small to medium avocado, halved
  • 1 egg
  • 1/4 cup fresh basil, plus more for serving
  • kosher salt and pepper
  • 2 small zucchini, cut into ribbons
  • 2 tablespoons chopped fresh thyme or oregano
  • 1 teaspoon crushed red pepper flakes, or to taste
  • 1 cup grated parmesan cheese, plus more for serving

Crispy Avocado Tacos via Whats Cooking Good Looking

  • about 1 cup of butter radishes, quartered
  • a drizzle of olive oil
  • salt + pepper
  • 3-4 avocados, that are on the firm side
  • 1/4 cup of bread crumbs (gluten-free if you want to make this gf)
  • 1 can of (organic, no-sodium) cannelloni beans, drained
  • 2 tablespoons of your favorite sriracha
  • about 1 cup of purple or green cabbage, shredded (sliced very thin)
  • about 10 tortillas (I like to use Ezekiel gluten-free sprouted tortillas)

Stuffed Eggplant with Sunflower Romesco via The First Mess

SUNFLOWER ROMESCO (makes extra):

  • ½ cup toasted sunflower seeds
  • 2 roasted red peppers (homemade or from a jar)
  • 2 cloves of garlic, chopped
  • 1 teaspoon smoked paprika
  • ½ teaspoon aleppo pepper, or a pinch of cayenne
  • 2 tablespoons sherry OR apple cider vinegar
  • 1 tablespoon tomato paste
  • small handful flat parsley leaves
  • sea salt and ground black pepper
  • scant ½ cup virgin olive oil
  • STUFFED EGGPLANT:
  • 2 small-medium eggplants
  • olive oil
  • sea salt and ground black pepper
  • 1 small shallot, chopped
  • 1 clove garlic, chopped
  • ¼ cup romesco
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons tahini
  • 4 servings cooked grain of choice (I used quinoa)
  • big handful of fresh and leafy herbs, chopped (I used cilantro, parsley & a bit of dill)
  • toasted sunflower seeds or dukkah, for topping

Cauliflower Steak with Olive and Caper Salsa via Cook Republic

  • 1 head of cauliflower (1.5kg)
  • 3 tablespoons olive oil

For the olive and caper salsa

  • 60g pitted green olives
  • 1 tablespoon baby capers, drained
  • 1/2 teaspoon red chilli flakes
  • 1 tablespoon chopped fresh parsley
  • 60ml extra virgin olive oil

To finish

  • salt to taste
  • freshly ground black pepper
  • extra chopped parsley
