There’s something about digging into a beautiful veggie-filled bowl that makes for a slightly more exciting meal time. Grilled chicken on a plate with some greens and a side salad? Not so exciting. But throw some quinoa, roasted sweet potatoes, radishes and farm fresh vegetables into a bowl with a tasty dressing and suddenly…somehow everything feels just a bit more elevated.

Whether you’re packing a meal for work, prepping a quick lunch, or inviting a friend over for dinner, here are a few simple and healthy bowl recipes that will add just a touch more happiness to your meal.

Chicken shawarma bowls via Gimme Delicious

  • For the rice:
  • 1 cup basmati rice
  • 1¾ cup water
  • pinch of salt
  • For the chicken:
  • 2 chicken thighs boneless, skinless (or app ½ lb)
  • 1 tsp lemon juice
  • 1 small garlic clove, minced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ¼ tsp ground cardamom
  • ¼ tsp smoked paprika
  • ¼ tsp salt
  • ¼ tsp Black pepper
  • 1 tsp olive oil
  • For the jalapeno yogurt Sauce:
  • ¼ cup plain yogurt
  • 1 jalapeño pepper, seeds and veins removed, adjust to taste
  • ¼ cup chopped herb of choice (parsley, mint, dill or cilantro)
  • 1 clove of garlic
  • 1 tsp of lime or lemon juice
  • For the salad:
  • ½ cup diced tomato
  • ½ cup diced cucumber
  • ¼ cup diced onion
  • ¼ cup chickpeas (canned or cooked)
  • 2 tablespoons minced parsley
  • 1 tablespoon lime or lemon juice
  • salt and pepper to taste

Spicy Salmon Poke Bowl via Jessica Gavin

  • 1 pound sockeye salmon cut into ¾ inch cubes
  • 1/4 cup soy sauce low sodium, or tamari
  • 1 teaspoon rice wine vinegar or apple cider vinegar
  • 1 teaspoon sriracha or chili paste
  • 1 teaspoon Sesame oil
Pickled Cucumbers-
  • 2 6-inch persian cucumbers thinly sliced
  • 1/2 cup rice wine vinegar, Kikkoman
  • 1/2 cup water
  • 1/3 cup honey
  • 1 teaspoon salt
  • 1/2 teaspoon red chili flakes dried
Sriracha Sauce-
  • 2 tablespoons sriracha
  • 2 tablespoons plain greek yogurt or light mayonnaise

Sweet Potato Chickpea Bowl via Minimalist Baker

Veggies:
  • 2 Tbsp olive, melted coconut, or grape seed oil
  • 1/2 red onion, sliced in wedges
  • 2 large sweet potatoes, halved
  • 1 bundle (227 g) broccolini, large stems removed, chopped
  • 2 big handfuls kale, larger stems removed
  • 1/4 tsp each salt + pepper
Chickpeas:
  • 1 15-ounce (425 g) chickpeas, drained, rinsed + patted dry
  • 1 tsp cumin
  • 3/4 tsp chili powder
  • 3/4 tsp garlic powder
  • 1/4 tsp each salt + pepper
  • optional: 1/2 tsp oregano
  • optional: 1/4 tsp turmeric
Tahini sauce (optional)
  • 1/4 cup (56 g) tahini
  • 1 Tbsp maple syrup
  • 1/2 lemon, juiced
  • 2-4 Tbsp hot water to thin
