Meet These Veggie Burgers

There are cheeseburgers, and there are veggie burgers. While both items are on opposite sides of the food spectrum, sometimes all you’re chasing is that burger craving. You want something smushed in between two toasted buns, slathered with lettuce, tomato, onions, potentially a fried egg, and a few other dressed up accoutrements. And if you don’t want to go for the beef at lunch (it makes some people

sleepy midday!) then go for the veg. It can often be just as satisfying, and the flavor combinations can be pretty endless.

Whether it’s a vegetarian alternative for burgers or meatballs, here are a few options to get you started. Don’t knock it until you’ve tried it! Oh, and if you wanted to forego bread entirely for the burger-ish experience, just throw something in between two portobello mushroom pieces. Magic.

Vegetarian Lentil Meatballs in Lemon Pesto via Rip and Tan

For the Vegetarian Meatballs:

  • 2 cups cooked lentils
  • 2 eggs lightly beaten
  • 3/4 cup ricotta
  • 1/4 cup fresh grated parmesan cheese
  • 1 large clove garlic minced
  • 1/2 teaspoon fennel seed crushed
  • 2 tablespoons parsley finely chopped
  • 1 pinch fresh thyme or dried
  • 1 teaspoon sea salt
  • 1 teaspoon pepper
  • 2/3 cup breadcrumbs fresh or panko

For the lemon pesto:

  • 1 clove garlic
  • 1/4 cup pinenuts
  • 1 zest and juice lemon
  • 1/2 teaspoon sea salt
  • 1 cup basil leaves
  • 1/4-1/3 cup extra virgin olive oil
  • 2 tablespoons grated parmesan
  • 2 tablespoons water to thin

The Ultimate Veggie Burger via The Awesome Green

  • 2 cups beet root, peeled and cut into cubes
  • 1 cup red quinoa (white is just as fine), cooked
  • 1 tbsp olive oil
  • 1 egg
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 2 tbsp wholemeal bread crumbs
  • 1 tbsp flax seeds
  • 1 tsp coconut oil, melted
  • 2 tsp lemon juice
  • ¼ tsp chilli flakes
  • 1 tsp pink Himalayan salt

For the dressing:

  • 1 ripe avocado
  • 2 tbsp tahini (sesame paste)
  • 3 tbsp lime juice
  • 1 garlic clove
  • ¼ tsp pink Himalayan salt

Marinated Portobello Cashew Cheese Burger via This Rawsome Vegan Life

Marinated mushrooms:
  • 4 portobello mushrooms
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon liquid aminos (or soy sauce)
Cashew cheese:
  • 1 3/4 cups cashews
  • 1/2 cup water
  • 1/3 cup nutritional yeast
  • Juice from 1 lemon
  • 2 peeled garlic cloves
  • 2 tablespoons miso
  • Salt and herbes de provence, to taste
Toppings:
  • Sliced tomatoes
  • Fresh chopped chives, spinach and parsley
  • Anything else your heart desires
