The Vegan Way

Eggs are great. You can get them scrambled, hard boiled, flipped and folded into a buttery omelet, or fried on toast. The possibilities are endless. But what about when you’re on the hunt for a vegan breakfast? The options are not as limited as you may think. There are more things out there than eggs and greek yogurt! Explore these options:

Vegan Breakfast Tacos via Minimalist Baker

  • 8 ounces firm tofu
  • 1 cup cooked black beans
  • 1/4 red onion, diced
  • 1 cup fresh cilantro, chopped
  • 1 ripe avocado, sliced (or sub guacamole)
  • 1/2 cup salsa for serving (hot sauce also optional)
  • 1 lime sliced, for serving
  • 1/4 cup pomegranate arils
  • Corn tortillas (2 per person)

  • 3 cups unsweetened almond milk
  • ½ cup chia seeds
  • 1 tablespoon pure maple syrup, to taste
  • 1 cup blueberries
  • ¾ cup chopped mango

Dark Chocolate Quinoa Bowl via Minimalist Baker

  • 1 cup (172 g) uncooked white quinoa
  • 1 cup (240 ml) unsweetened almond milk, plus more for serving
  • 1 cup (240 ml) coconut milk (light canned, or the beverage in a carton)
  • pinch sea salt
  • 2 Tbsp (10 g) unsweetened cocoa powder
  • 2-3 Tbsp (30-45 ml) maple syrup or coconut sugar
  • optional: 1/2 tsp pure vanilla extract
  • 3-4 squares vegan dark chocolate, roughly chopped

  • 6 tbsp cocoa powder
  • 1 &1/2 cups plain flour 185g
  • 1 cup brown sugar 220g
  • 1 cup mashed avocado
  • 1 & 1/2 cups water 370ml

  • 2 tsp baking powder

Vegan Gluten Free Waffles via Minimalist Baker

  • 1 1/4 cup unsweetened almond milk + 1 tsp white or apple cider vinegar
  • 1/4 cup olive, canola or melted coconut oil
  • 1/4 cup agave nectar or maple syrup (or honey if not vegan)
  • heaping 1/2 cup gluten free rolled oats
  • 1 3/4 cups gluten free flour blend
  • 1 1/2 tsp baking powder
  • pinch sea salt
